Bihari Litti Chokha Recipe


Litti Chokha Recipe (English)

Ingredients:

**For Litti Dough:**

- 2 cups whole wheat flour

- 1 tablespoon ghee (clarified butter) or oil

- Water to knead the dough

- A pinch of salt


**For Litti Filling:**

- 1 cup roasted gram flour (sattu)

- 1 medium-sized onion, finely chopped

- 2-3 green chilies, finely chopped

- 1 tablespoon ginger, grated

- 1 tablespoon garlic, minced

- 1 teaspoon ajwain (carom seeds)

- 1 teaspoon kalonji (nigella seeds)

- 1 teaspoon mustard oil

- Salt to taste

- Water, if needed


**For Chokha:**

- 3-4 medium-sized boiled potatoes

- 2-3 medium-sized roasted tomatoes

- 2-3 roasted eggplants

- 1 medium-sized onion, finely chopped

- 2-3 green chilies, finely chopped

- 1 tablespoon mustard oil

- Salt to taste

- Fresh coriander leaves for garnish


Instructions:

**For Litti:**

1. In a mixing bowl, combine whole wheat flour, ghee or oil, and a pinch of salt. Knead the mixture into a firm dough using water. Cover and let it rest for 15-20 minutes.

2. Meanwhile, prepare the filling by mixing roasted gram flour (sattu), chopped onions, green chilies, grated ginger, minced garlic, ajwain, kalonji, mustard oil, and salt. Add a little water if necessary to bind the mixture.

3. Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the prepared filling in the center and seal the edges. Repeat for all the dough balls.

4. Preheat the oven to 180°C (350°F). Bake the littis for about 30-35 minutes until they turn golden brown.


**For Chokha:**

1. Mash the boiled potatoes, roasted tomatoes, and roasted eggplants in a mixing bowl.

2. Add finely chopped onions, green chilies, mustard oil, and salt. Mix well.

3. Garnish the chokha with fresh coriander leaves.

Serve hot littis with chokha.

**लिट्टी भराव के लिए:**

- 1 कप भुना हुआ चना आटा (सत्तू)

- 1 मध्यम आकार का प्याज, बारीक कटा हुआ

- 2-3 हरी मिर्च, बारीक कटी हुई

- 1 बड़ा चम्मच अदरक, कद्दूकस किया हुआ

- 1 बड़ा चम्मच लहसुन, कद्दूकस किया हुआ

- 1 छोटा चम्मच अजवाइन

- 1 छोटा चम्मच कलोंजी

- 1 छोटा चम्मच सरसों का तेल

- नमक स्वाद के अनुसार

- पानी, यदि आवश्यक हो


**चोखा के लिए:**

- 3-4 मध्यम आकार के उबले हुए आलू

- 2-3 मध्यम आकार के भुने हुए टमाटर

- 2-3 भुने हुए बैंगन

- 1 मध्यम आकार का प्याज, बारीक कटा हुआ

- 2-3 हरी मिर्च, बारीक कटी हुई

- 1 बड़ा चम्मच सरसों का तेल

- नमक स्वाद के अनुसार

- ताजा धनिया पत्तियां, सजाने के लिए


विधि:


**लिट्टी के लिए:**

1. एक मिश्रण कटोरी में गेहूं का आटा, घी या तेल, और नमक की चुटकी मिलाएं। पानी का उपयोग करके सख्त आटा गूंथें। ढककर 15-20 मिनट के लिए छोड़ दें।

2. इसी बीच, भराव तैयार करें। भुने हुए चना आटा (सत्तू), कटी हुई प्याज, हरी मिर्च, कद्दूकस किया हुआ अदरक, कद्दूकस किया हुआ लहसुन, अजवाइन, कलोंजी, सरसों का तेल, और नमक मिलाएं। यदि आवश्यक हो, तो थोड़ा पानी डालें।

3. आटे को छोटे गोले में बाँटें। प्रत्येक गोले को छोटा गोला बनाएं। इसके बीच में तैयार किया हुआ भराव रखें और किनारे को सील करें। सभी आटे के लिए यही कार्यवाही दोहराएं।

4. ओवन को 180°C (350°F) पर प्रीहीट करें। लिट्टी को लगभग 30-35 मिनट तक बेक करें, जब तक वे सुनहरे भूरे नहीं हो जाते।


**चोखा के लिए:**

1. एक मिश्रण कटोरी में उबले हुए आलू, भुने हुए टमाटर, और भुने हुए बैंगन को मैश करें।

2. बारीक कटी हुई प्याज, हरी मिर्च, सरसों का तेल, और नमक डालें। अच्छी तरह मिलाएं।

3. चोखा को ताजा धनिया पत्तियों से सजाएं।


गर्मा गरम लिट्टी को चोखा के साथ परोसें।
