Kadhai Paneer Recipe


 Kadhai Paneer Recipe 

Ingredients:

250 grams paneer (cottage cheese), cubed

2 medium-sized onions, finely chopped

2-3 tomatoes, finely chopped or pureed

1 green bell pepper (capsicum), thinly sliced

2-3 green chilies, slit

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander seeds, crushed

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon garam masala

1 teaspoon kasuri methi (dried fenugreek leaves)

2 tablespoons oil

Salt to taste

Fresh coriander leaves for garnishing

Instructions:

  1. Heat oil in a kadhai or pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and slit green chilies. Sauté for a minute.
  4. Now, add chopped tomatoes or tomato puree. Cook until the tomatoes are soft and oil separates from the masala.
  5. Add crushed coriander seeds, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
  6. Toss in the sliced bell pepper (capsicum) and cook for 3-4 minutes, keeping them slightly crunchy.
  7. Add cubed paneer and mix gently with the masala. Cook for another 3-4 minutes on low flame.
  8. Sprinkle garam masala and crushed kasuri methi. Stir well.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with roti, naan, or steamed rice.

सामग्री:

250 ग्राम पनीर, कटा हुआ

2 मध्यम आकार के प्याज, बारीक कटा हुआ

2-3 टमाटर, बारीक कटा हुआ या प्यूरी

1 हरी शिमला मिर्च, पतले टुकड़े में कटी हुई

2-3 हरी मिर्च, छीली हुई

1 बड़ा चम्मच अदरक-लहसुन का पेस्ट

1 छोटा चम्मच जीरा

1 छोटा चम्मच धनिया के बीज, कुचले हुए

1 छोटा चम्मच लाल मिर्च पाउडर

1/2 छोटा चम्मच हल्दी पाउडर

1 छोटा चम्मच गरम मसाला

1 छोटा चम्मच कसूरी मेथी

2 बड़े चम्मच तेल

नमक स्वाद के अनुसार

ताजा धनिया पत्तियां, सजाने के लिए

विधि:

  1. कड़ाही या पैन में तेल गरम करें। जीरा डालें और उन्हें फुटने दें।
  2. कटा हुआ प्याज डालें और सुनहरा होने तक भूनें।
  3. अदरक-लहसुन का पेस्ट और छीली हुई हरी मिर्च डालें। एक मिनट तक भूनें।
  4. अब, कटा हुआ टमाटर या टमाटर का प्यूरी डालें। तब तक पकाएं जब तक टमाटर नरम नहीं हो जाते और तेल मसाले से अलग होने लगता है।
  5. कुचले हुए धनिया के बीज, लाल मिर्च पाउडर, हल्दी पाउडर, और नमक डालें। अच्छी तरह मिलाएं और दो-तीन मिनट तक पकाएं।
  6. शिमला मिर्च डालें और 3-4 मिनट तक पकाएं, थोड़ा कुचला हुआ रखें।
  7. पनीर को डालें और मसाले के साथ हल्के हाथ से मिलाएं। हल्की आंच पर और 3-4 मिनट तक पकाएं।
  8. गरम मसाला और कसूरी मेथी छिड़कें। अच्छी तरह मिलाएं।
